ANZAC Biscuits

I fell in love with New Zealand after studying abroad in 2009. I have managed to recreate in my own way, the delicious ANZAC (Australian and New Zealand Army Corps) Biscuit to keep my travel memories alive through food! This cookie pairs perfectly with coffee in the morning as well as cumbled over vanilla ice cream at night!

Ingredients
  

  • 3/4 cup All-Purpose Flour
  • 1 ½ cups Old Fashioned Oats
  • 3/4 cup Granulated Sugar
  • 1/2 cup Sweetened Shredded Coconut
  • 1/2 cup Pecans, Walnuts, Almonds or Macadamia Nuts
  • 2 Tablespoons Water
  • 1 ½ Tablespoons Honey
  • 1 teaspoon Baking Soda
  • 1/2 cup Butter Salted

Instructions
 

  • Preheat your oven to 325°F.
  • In a large mixing bowl, combine the flour, oats, sugar, coconut and nuts.
  • In a Sauce pan, combine the water, honey abd baking soda. Bring to a boil (it will look like foam), then stir in the butter until completely melted. Turn off heat and set aside to cool for 5 minutes.
  • Add the butter mixture to the dry ingredients and stir until thoroughly coated.
  • Using a cookie scoop, scoop dough 2" apart on a parchment lined baking sheet. Bake for exactly 12 minutes.
  • Remove from oven; transfer to a cooling rack after 5 minutes to completely cool. Store in an airtight container.
