  • 8 1/2"x4 1/2" Loaf Pan

Ingredients
  

  • 1/3 cup Avocado Oil
  • 3/4 cup Raw Honey
  • 2 Eggs
  • 4 Large Ripened Bananas Smashed
  • 1/4 cup 1% Milk
  • 1 teaspoon Baking Soda
  • 2 teaspoons Pure Vanilla Extract
  • 1/2 teaspoon Salt
  • 2 teaspoons Ground Cinnamon
  • 1 ¾ cups Whole Wheat Flour
  • 1 cup Pecans Roughly Chopped
  • 1 handful Whole Pecans
  • 1 teaspoon Ground Cinnamon (For Sprinkling)

Instructions
 

  • Preheat oven to 325°F and grease an 8½"x4½" loaf pan with coconut oil spray.
  • In a large mixing bowl, whisk together the acocado oil and honey. Beat in the eggs; add in the milk and mashed bananas; mix.
  • Whisk in the baking soda, pure vanilla extract, salt and cinnamon. Using a spatula, stir in the whole wheat flour until combined; stir in the chopped walnuts.
  • Pour the batter into the loaf pan; sprinkle with cinnamon and top with whole pecans.
  • Bake for 55 minutes; transfer to a cooling rack to cool completely; slice and store in an airtight container.
