8 1/2"x4 1/2" Loaf Pan
- 1/3 cup Avocado Oil
- 3/4 cup Raw Honey
- 2 Eggs
- 4 Large Ripened Bananas Smashed
- 1/4 cup 1% Milk
- 1 teaspoon Baking Soda
- 2 teaspoons Pure Vanilla Extract
- 1/2 teaspoon Salt
- 2 teaspoons Ground Cinnamon
- 1 ¾ cups Whole Wheat Flour
- 1 cup Pecans Roughly Chopped
- 1 handful Whole Pecans
- 1 teaspoon Ground Cinnamon (For Sprinkling)
Preheat oven to 325°F and grease an 8½"x4½" loaf pan with coconut oil spray.
In a large mixing bowl, whisk together the acocado oil and honey. Beat in the eggs; add in the milk and mashed bananas; mix.
Whisk in the baking soda, pure vanilla extract, salt and cinnamon. Using a spatula, stir in the whole wheat flour until combined; stir in the chopped walnuts.
Pour the batter into the loaf pan; sprinkle with cinnamon and top with whole pecans.
Bake for 55 minutes; transfer to a cooling rack to cool completely; slice and store in an airtight container.
