Grain Free Almond Flour Chocolate Chip Cookies

These healthy cookies are just what you need when you want something sweet, but don't want the extra calories! Dang, these are SO GOOD! One of my kids' favorites!

- 8 Tablespoons Butter Salted; Room Temperature
- 1/4 cup Coconut Oil
- 3/4 cup Coconut Sugar
- 2 teaspoons Vanilla Extract
- 1 teaspoon Almond Extract
- 2 Large Eggs
- 1/2 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 3 cups Almond Flour
- 1½ cups Mini Chocolate Chips (I used Enjoy Life)
Preheat oven to 350°F and line 2 baking sheets with parchment paper.
In a stand mixer (with a paddle attachment), beat together the butter, coconut oil, and coconut sugar (be sure to scrape the sides of the bowl). Add the vanilla and almond extracts as well as the eggs; mix.
Slowly add in the almond flour. Fold in the chocolate chips until evenly incorporated.
Using a cookie scoop, place cookie balls 2 inches apart on the parchment lined baking sheets. Bake for 13 minutes. After baking wait 5 minutes before transferring to a cooling rack. Store in an airtight container.
