- 1 cup Butter Salted; At Room Temperature
- 1/3 cup Granulated Sugar
- 1 ⅔ cups All-Purpose Flour
- 1 ¼ cups Ruffles Potato Chips Crushed
- 1/4 cup Confectioners' Sugar
- 1 teaspoon Pure Vanilla Extract
Preheat your oven to 325°F.
In a stand mixer (using a paddle attachment), cream the butter, sugar and vanilla extract until light and fluffy. Slowly add in the flour 1/2 cup at a time until thoroughly mixed. Stir in the crushed potato chips on low speed until combined.
Using a cookie scoop, scoop the dough and place 2" apart on parchment lined baking sheets. Bake 15 minutes.
Transfer to a cooling rack to cool completely; sprinkle confectioners' sugar over the tops; store in an airtight container.
