Ruffles Potato Chip Snowball Cookies

I love cookies and I love chips.....so, let's combine the two! The potato chips add a surprising salty crunch in every bite!

Ingredients
  

  • 1 cup Butter Salted; At Room Temperature
  • 1/3 cup Granulated Sugar
  • 1 ⅔ cups All-Purpose Flour
  • 1 ¼ cups Ruffles Potato Chips Crushed
  • 1/4 cup Confectioners' Sugar
  • 1 teaspoon Pure Vanilla Extract

Instructions
 

  • Preheat your oven to 325°F.
  • In a stand mixer (using a paddle attachment), cream the butter, sugar and vanilla extract until light and fluffy. Slowly add in the flour 1/2 cup at a time until thoroughly mixed. Stir in the crushed potato chips on low speed until combined.
  • Using a cookie scoop, scoop the dough and place 2" apart on parchment lined baking sheets. Bake 15 minutes.
  • Transfer to a cooling rack to cool completely; sprinkle confectioners' sugar over the tops; store in an airtight container.
