Garlic Lemon Pork Tenderloin
A ridiculously flavorful pork dish that feels like a bomb detonating in your mouth!
This pork can be served hot or cold…..the flavors will just marinate longer together as it sits in the refrigerator! My Garlic Lemon Pork Tenderloin is a clean eating recipe that is good for the soul! We like to eat the left overs on sourdough bread with coleslaw…..di-freaking-vine! Pictured below are the ingredients you will need to create my recipe for Garlic Lemon Pork Tenderloin.
Preheat oven to 400 degrees Fahrenheit and lightly grease a baking dish (I used olive oil spray). Place pork tenderloin in the baking dish and pierce all over; leaving puncture holes on the top and sides of the loin.
Separate the bulbs of garlic and peel all the cloves; set aside. Squeeze lemons (leave one for slicing) until you have 1/2 cup of juice; set aside. Whisk together the italian seasoning, garlic powder, cumin, salt, chili powder, smoked paprika and black pepper. Massage ALL of the seasoning into the tenderloin. Drizzle the lemon juice over the tenderloin and place garlic cloves all around it; thinly slice remaining lemon and position slices on top and beside the loin.
Bake for 40 minutes until the outside of the tenderloin is browned and the center is cooked all the way through. Take out of oven and ladle juices from the dish over the tenderloin. Cover with aluminum foil and allow to rest for 10 minutes before slicing; slice into 1″ pieces and ladle more juices over the meat and enjoy! Refrigerate leftovers; tenderloin can be reheated or served cold.

- 3 Tablespoons Extra Virgin Olive Oil
- 1/2 cup Lemon Juice Freshly Squeezed
- 1 Lemon Thinly Sliced
- 1-2 bulbs Garlic Separated and Peeled
- 4 teaspoons Italian Seasoning
- 2 teaspoons Garlic Powder

- 1 teaspoon Smoked Paprika
