Sharp Cheddar Cheese And Date Pastry Cookies
The perfect addition to EVERY SINGLE charcuterie board! The salty cheese and sweet dates are a match made in Heaven that pair VERY nicely with a dram of whiskey (straight…..no ice) or glass of DRY red wine…..NO sweet wine at my table!
I received this recipe from our REALLY good friends that live in Conway as well. Actually, they are more like our third set of parents as well as grandparents for Kade and Indy. If my parents or Stephen’s parents are unavailable for the kids’ grandparent functions, then Ken and Cathy will gladly step in and be there for them…..so, it is no surprise…..that we absolutely ADORE them! The first time I tried their cheddar pastry recipe, I about hit the dang floor…..it was so good! This is my second favorite Christmas cookie recipe that I bake…..so tasty…..and it also gives a nice balance to the other sweet cookies on your platter. I made these last week…..and they are already gone…..*ahem* Stephen I’m looking at you…..
Using a grater, finely grate the sharp cheddar cheese; set aside. In a stand mixer (using a paddle attachment), mix together the butter, cheese and flour until the mixture becomes grainy and sand like. Shape the dough into 2 long rolls and wrap in wax paper. CHILL OVERNIGHT. The next day (using a sauce pan), combine the chopped dates, sugar and water; simmer over low heat; stirring constantly until the dates have softened and the mixture is thick and sticky; refrigerate for 15 minutes or until chilled.
Preheat your oven to 350 degrees Fahrenheit and slice the dough into 1/8″ slices. Place slices 2″ apart on parchment lined baking sheets. Add a teaspoon of filling on top of the slices; top the filling with a second slice of dough to make a sandwich. Bake for 15 minutes. Transfer to cooling rack before storing in an airtight container.

- 4 ounces Sharp Cheddar Cheese (Cracker Barrel, Cabot or Tillamook Brand)
- 1 cup All-Purpose Flour
- 8 ounces Dates Pitted; Chopped
- 1/2 cup Light Brown Sugar Packed
- 1/4 cup Water
Instructions
