I fell in love with New Zealand after studying abroad in 2009. I have managed to recreate in my own way, the delicious ANZAC (Australian and New Zealand Army Corps) Biscuit to keep my travel memories alive through food! This cookie pairs perfectly with coffee in the morning as well as cumbled over vanilla ice cream at night!

I kid you not…..flying into the South Island of New Zealand is like looking down onto the landscapes of Peter Pan’s Neverland! It is one of the most wondrous sights you will ever see…..in fact, the entire country is one big versatile sight that you will never forget! If I had to move anywhere else in this world, it would be to New Zealand…..I love their culture, people, views and most of all, their sustainability as a country itself…..you will not find litter ANYWHERE (well, at least not anywhere that I visited)…..absolutely CLEAN and everyone takes responsibility in keeping it that way! GOALS!

This is my Dad’s ABSOLUTE favorite cookie I bake! I make him special batches throughout the year so he can get his “fix”, ha! The browned butter and honey elevate this cookie to a whole new level…..just another case of creating something magical from using simple ingredients.

To begin, preheat your oven to 325 degrees Fahrenheit. In a large mixing bowl, combine the flour, oats, sugar, coconut and nuts. In a Sauce pan, combine the water, honey abd baking soda. Bring to a boil (it will look like foam), then stir in the butter until completely melted. Turn off heat and set aside to cool for 5 minutes.

Add the butter mixture to the dry ingredients and stir until thoroughly coated. Using a cookie scoop, scoop dough 2″ apart on a parchment lined baking sheet. Bake for exactly 12 minutes.

Remove from oven; transfer to a cooling rack after 5 minutes to completely cool. Store in an airtight container.

Ingredients
  

  • 3/4 cup All-Purpose Flour
  • 1 ½ cups Old Fashioned Oats
  • 3/4 cup Granulated Sugar
  • 1/2 cup Sweetened Shredded Coconut
  • 1/2 cup Pecans, Walnuts, Almonds or Macadamia Nuts
  • 2 Tablespoons Water
  • 1 ½ Tablespoons Honey
  • 1 teaspoon Baking Soda
  • 1/2 cup Butter Salted

Instructions
 

  • Preheat your oven to 325°F.
