Chia seeds are fantastic and worthy to appear in your diet on the regular! They are loaded in antioxidants, high in fiber and protein AND will expand in your stomach as they interact with water…..keeping you fuller, longer! I love to serve these with a smear of goat cheese when I am feeling the urge to snack…..and I come from a long line of “grazers” in my family. We love to snack….but snacking can lead to an unnecessary calorie intake. So, why not make my own version of crackers to outsmart my own stomach and cravings, ha!

To begin, preheat your oven to 325°F. In a mixing bowl, add the almond flour, chia seeds, garlic powder, onion powder and salt; whisk together. Add the beaten egg and mix thoroughly with your hands. Place cracker dough on one piece of parchment paper; then place the second piece of parchment paper on top of the dough. Using a rolling pin, carefully roll the dough out evenly until about 1/8″ thick. Discard the top piece of parchment paper.

Transfer the bottom piece of parchment paper with the dough by sliding it onto a baking sheet. Using a paring knife, cut the dough into cracker shapes (crisscross diamonds).

Sprinkle with freshly cracked black pepper and flaked Himalayan Pink Salt. Bake for 15 minutes.

After baking, allow to cool for 15 minutes before breaking apart. Store in an airtight container. I like to serve these with a smear of goat cheese; delicious!
