Pecan And Grape Rotisserie Chicken Salad
About 10 times a year, I will get a craving for chicken salad…..and not just any type of chicken salad….the chicken must be Rotisserie and doused in not just any type of mayonnaise….it has to be DUKE’s!
I know at first thought, chicken salad wouldn’t cross your mind as a dish worth craving….but my recipe will instantly change your palate and mind…..no doubt about it! The rotisserie chicken adds a ton of flavor already to the salad; especially when including the tasty chicken skin! Now, I do add onion to my chicken salad…..but I advise that you literally mince the onion as small as you can….almost creating a paste…..you want to essentially taste the essence of onion in the chicken salad without having to chew the texture of the onion as you would if you roughly chopped it. You will get plenty of texture and crunch from the celery and pecans…..also…..large chunks of onion can sometimes overpower the flavor in each bite…..and I hate that! However, the real showstopper of this harmonious mix is the DUKE’s Mayonnaise. Once you go DUKE’s….you never go back, TRUST ME! The flavor is wonderful and a true Southern staple for my family! To make this recipe; it’s SIMPLE! In a mixing bowl, combine all of the ingredients. Mix thouroughly; store in an airtight container and refrigerate. Serve on whole wheat bread or whole wheat crackers. EASY-PEEZY!

Ingredients
- 1 Rotisserie Chicken Picked Clean (With The Skin)
- 2 cups Seedled Red Grapes Halved
- 3 Stalks Celery Thinly Sliced
- 1/4 cup Yellow Onion Finely Minced
- 2 cups Pecans Roughly Chopped
- 1/4 cup Granulated Sugar
- 2 teaspoons Black Pepper Freshly Cracked
- 1 teaspoon Flaked Himalayan Pink Salt
- 1 Tablespoon Garlic Powder
- 1 ¼ cups DUKE's Real Mayonnaise
Instructions
- In a mixing bowl, combine all of the ingredients. Mix thouroughly; store in an airtight container and refrigerate. Serve on whole wheat bread or whole wheat crackers.
