My kids LOVE these potato chip cookies so much! This recipe would be great for any and all children’s birthday parties. It is a fun and tasty spin on your average cookie that will leave you wanting more!

To begin, preheat your oven to 325 degrees Fahrenheit. In a stand mixer (using a paddle attachment), cream the butter, sugar and vanilla extract until light and fluffy. Slowly add in the flour 1/2 cup at a time until thoroughly mixed. Stir in the crushed potato chips on low speed until combined.

Using a cookie scoop, scoop the dough and place 2″ apart on parchment lined baking sheets. Bake 15 minutes.

Transfer to a cooling rack to cool completely; sprinkle confectioners’ sugar over the tops; store in an airtight container.

  • 1 cup Butter Salted; At Room Temperature
  • 1/3 cup Granulated Sugar
  • 1 â…” cups All-Purpose Flour
  • 1 ¼ cups Ruffles Potato Chips Crushed
  • 1/4 cup Confectioners' Sugar
  • 1 teaspoon Pure Vanilla Extract
